- 2 Tbsps olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp ground black pepper
- 1/4 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp red pepper flakes
- 16 oz frozen chopped spinach, thawed and squeezed dry
- 2 Tbsps Worcestershire sauce
- 2 lbs ground turkey
- 3/4 cup panko bread crumbs
- 2 eggs
Preheat oven to 400 F. Line a large baking sheet with parchment paper.
Pu a large frying pan on medium heat. Add olive oil. Add onion, garlic, and spices. Sauté about 5 minutes.
Add spinach and Worcestershire sauce and stir. Sauté for about 3 minutes. Remove from heat and let it cool a bit.
Whisk the eggs in a large bowl. Mix in the turkey and breadcrumbs. Add the cooled spinach mixture.
Create 1 to 1.5 inch meatballs and place on the baking sheet.
Bake 20 minutes. Remove from oven. Serve with pasta sauce and shredded mozzarella, or any other way you use meatballs - they're good in soup too.
